This delicious soup is packed full of veggies and can be simple or decadent: you choose!
Serves 4 – one serve equals approximately 2 cups soup
Basic recipe ingredients
1 tbsp olive oil
6 cloves garlic, chopped
1 small brown onion, diced
5 cups broccoli florets
3 cups cauliflower florets
3.5 cups vegetable stock
1 bay leaf
2 tbsp Dijon mustard
2 tsp dried thyme
Salt and pepper to taste
Optional ingredients
1 cup grated cheddar cheese
OR
⅔ cup thickened cream
Method
Heat the olive oil in a large, non-stick pan. Add the garlic and onion and cook until fragrant.
Add the broccoli and cauliflower and mix well.
Add the stock, bay leaf, mustard and thyme. Season to taste.
Simmer for 20 minutes, until vegetables soften.
Basic recipe: Turn off heat and use a hand blender to blend to a smooth consistency.
Adding cheese: Turn off heat and add the cheese. Mix and let it sit for a few minutes to let the cheese melt slightly. Use a hand blender to blend to a smooth consistency.
