LIVING (TO THE MAX)

A diagnosis of type 1 diabetes hasn’t held back Bec Johnson, in fact it’s shaped her life, as she tells Cathy O’Leary, Editor at Medical Forum. “It’s my job to be both a person and a pancreas,” Bec tells Cathy. After being told the long list of things she probably wouldn’t be able to do, Bec decided to do many of them anyway, but only after doing her homework.

Eggplant lasagne

This low-carb eggplant lasagne is the best comfort food ever. Layers of eggplant, homemade beef and tomato sauce and oozy cheese are baked together until warm and bubbly. Perfect for the slightly cooler weather. Just add salad or some veg for a complete meal. 9g carbs per serving.
